Sausage + Veggie Sheet Pan Dinner

Ingredients:

  • 1-2 Boxes of shelf-stable gnocchi (the frozen won’t work for this recipe)

  • 2-3 Sweet Potatoes (*Make sure that the sweet potatoes are cubed small enough that they cook through)

  • 1 head of broccoli - chopped into smaller florets

  • 1 pint of cherry tomatoes - quartered

  • 5 Italian sausages (frozen homestyle meatballs - that have been thawed also work great!)

  • 1/2 cup olive oil

  • 1/2 tsp. salt

*This recipe makes A LOT - like a whole weeks worth of meal prep for 2 people lot. If you cut some quantities in half, it also makes plenty.*

Instructions

  1. Preheat the oven to 425°F

  2. Grease the bottom of a sheet pan with cooking spray

  3. Peel sweet potatoes

  4. Cube the sweet potatoes and lightly douse them with olive oil

  5. Bake sweet potatoes for 10-15 minutes

  6. In the mean time, cut the rest of the vegetables and the sausage.

  7. In a giant bowl, mix all ingredients together except the sweet potatoes.

  8. Pour olive oil and salt over the mixture and toss coating all the ingredients.

  9. When the sweet potatoes are done, add them to the rest of the ingredients.

  10. Mix everything up and then lay on a sheet pan (or 2!)

  11. Bake for 15 minutes.
