Crispy Cheddar Chicken

Ingredients:

  • 1.5-2 lbs. Chicken Breasts

  • 1 Sleeve Ritz crackers,

  • 1 1/2 cups shredded cheddar cheese

  • 1 tsp. minced garlic (Sometimes we put more in)

  • 1-2 scallions or green onion tops (We always use way more, but we like onion!)

  • Salt and Pepper to taste

  • 7 Tbsp. butter, melted

Instructions

  1. Preheat the oven to 350°F

  2. Grease the bottom of a 9x13 pan with cooking spray

  3. Pound the chicken breasts so they are about 1/4-1/2 inch in thickness.

  4. Slice the green onions

  5. Crush the Ritz crackers and put into a medium sized bowl.

  6. Add garlic, green onions, shredded cheese, salt and pepper

  7. Melt the butter in a microwave safe bowl.

  8. Dip the flattened chicken breasts into the butter.

  9. After dipped in butter, coat the chicken in the cracker mixture, coating both sides and lay into the 9x13 pan.

    *I like to put a thin later of the cracker mixture on the bottom of the pan to make sure the bottom side of the chicken has adequete cracker mixture.*

  10. Repeat until all chicken is coated and ready to be baked.

  11. Sprinkle left over cracker mixture on top of chicken in the pan

  12. Cook for 30-35 minutes
