Brown Gravy and Meatloaf Dinner

Cook: 45-60 Minutes


MEATLOAF INGREDIENTS:
2 lbs. ground beef
1 Tablespoon OliveOil
1 1/2 Tablespoons Dried onions
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 Tablespoons chopped garlic
1 Tablespoon fresh thyme, chopped
1 Tablespoon tomato paste
1 Tablespoon Worcestershire sauce
1/4 Chicken broth (we use Better Than Bouillon)
3/4 Cup breadcrumbs (we use Panko but Saltine crackers also work)
2 Eggs, beaten

GRAVY INGREDIENTS:

3 cups beef stock or broth (we use Better Than Bouillon)
1 teaspoon garlic powder
1 teaspon Worcestershire sauce
Salt (to taste)
Pepper (to taste)
1/4 cup of water mixed with 3 Tablespoons of corn starch


MEATLOAF INSTRUCTIONS:

1. Preheat the oven 350°
2. Add Olive oil to a skillet on Medium heat
3. Add the onions, salt and pepper to the oil and cook for about 5 minutes, until the onions are softened a bit
4. Add the garlic, stir and cook for 1 more minute.
5. Add the thyme, tomato paste and Worcestershire sauce
6. After everything is stirred together, pour in the chicken broth. Let the broth reduce for a few minutes and then turn off the heat, remove the skillet to cool.
7. In a large bowl, add together the beef, eggs, and breadcrumbs.
8. When the onion mixture in the skillet has cooled, add it to the meat mixture and combine. Using your hands is probably the easiest way to mix it.
9. Put aluminum foil or parchment paper on a sheet pan and spray it with cooking spray
10. Form the meatloaf into a loaf shape and place it in the oven.
11. Cook the meatloaf for 45-60 minutes. Check after 45 minutes - it’s all dependent on the shape and thickness of your meatloaf.

While the meatloaf is cooking, you can make the gravy.

GRAVY INSTRUCTIONS:
1. Add all the ingredients except for the cornstarch and broth mixture to a medium sauce pan.
2. Whisk together and bring to a boil.
3. Add in the corn starch while continuously stirring to prevent lumps
4. Bring the gravy to a boil and then turn the heat down to a simmer for 3-5 minutes.
5. Pour over meatloaf when serving


SIDES

FRESH GARLIC GREEN BEANS

1. Clean and Rinse green beans.
2. Cut off the ends of the beans.
3. Put tin foil on a pan, or spray with cooking spray.
4. Drizzle olive oil over the beans
5. Dust beans with garlic powder and salt to taste (we use Penzy’s Garlic Salt)
6. Put in the oven until the beans are cooked; they look shriveled and a lot smaller than when you started.
(We like to stick them in the oven with whatever is cooking towards the end of the duration and just keep an eye on them until they are done to our liking.)

WHIPPED MASHED POTATOES

1. Peal Potatoes and add to large pot that is filled with cold water. The water should go over the amount of potatoes you are using.
2. Boil potatoes until soft. (You can use a fork to tell if they’re soft)
3. Drain potatoes
4. Add to mixing approved bowl - we use our KitchenAid Mixer for this to get optimal whipped-ness. (Yes, I’m making that word up)
5. Beat potatoes until soft and there are no lumps.
6. Add in Milk, Butter and Salt to liking.
7. Scoop a big amount on your plate and drizzle the gravy over the meatloaf and the potatoes.
