Rhubarb Dessert
Prep: 25 Minutes
Cook: 275° - 300°F for 75-90 minutes
INGREDIENTS:
1 TBSP sugar
1 cup flour
1/2 tsp. salt
1 tsp. baking powder
2 TBSP butter
1 Beaten egg
2 TBSP cream or milk
3 cups cut rhubarb
3 oz. package of strawberry jello
TOPPING:
1 cup sugar
1/2 cup butter
1/2 cup flour
INSTRUCTIONS:
Grease a 8x10 pan.
1. Sift together sugar, flour, salt and baking powder.
2. Add the butter in small chunks along with the milk/cream and egg.
3. After mixing, pour in the pan and flatten with the heal of your hand until the bottom of the pan is covered by the crust mixture.
4. Sprinkle the 3 cups of rhubarb on top of the crust
5. Sprinkle the dry strawberry jello over the rhubarb
6. Then mix together sugar, butter and flour into a crumble and top the pan with it
7. Bake for 30 - 40 minutes at 350°F
Serve with whip cream or ice cream
