Strawberry Rhubarb Pie

Prep: 20 Minutes
Cook: 350°F

INGREDIENTS:

2 Cups diced rhubarb
2 Cups diced strawberries
1 1/4 Cup sugar
3 Tablespoon flour
1/2 teaspoon cinnamon
3 Tablespoons butter, melted
2 eggs, slightly beaten
2 pie crusts

INSTRUCTIONS:

1. Line pie tin with one crust.
2. Dice rhubarb and strawberries and mix together in a bowl. When mixed put in pie pan on top of the crust.
3. In a another small bowl, mix together sugar, flour, cinnamon, butter and eggs.
4. Pour mixture over strawberries and rhubarb in the pan
5. Cut the top pie crust to make a lattice top OR place top pie crust over mixture and cut vents in top crust.
6. Bake for 1 hour at 350°F or until rhubarb is tender and crust is golden brown.
