Rhubarb Crunch Bars

Cook: 350°F


TOPPING / CRUST:
1 Cup Flour
3/4 Cup Oatmeal
1 Cup brown sugar, packed
1/2 Cup melted butter
1 teaspoon cinnamon

SAUCE:
1 Cup sugar
2 Tablespoon cornstarch
1 Cup water
1 teaspoon vanilla

INGREDIENTS:

4 Cups diced rhubarb

INSTRUCTIONS:

1. Mix topping/crust together in bowl and pack half of the mixture in bottom of 9x13 pan.
2. In a sauce pan mix together sauce ingredients. Boil until sauce is thick and clear.
3. Put diced rhubarb in 9x13 pan on top of the crust
4. After sauce is clear, pour over the rhubarb in the pan.
5. Cover the rhubarb with the other half of the topping/crust
6. Bake for 1 hour at 350°F
